- 1/2 cup dry white wine
- 1 small shallot minced
- 1 stick butter cut into pieces
- 1/4 cup heavy cream
- - juice of 1 lemon
- - salt to taste

Step 1Heat wine and shallots. Bring to a boil and reduce until only about 2 tbsp. liquid left. Reduce to low and whisk in butter a few pieces at at time. Whisk in cream and lemon juice. Cook 1 more minute
