This is an unusual recipe and everyone who likes cranberries, loves it.

Ingredients

  • 1 c
    dried apricots
  • 1 c
    brown sugar, firmly packed
  • 1 c
    rasins - golden seedless
  • 3
    apples, granny smith
  • 1
    orange rind grated
  • 1
    lemon rind grated
  • 1/2 c
    ginger, crystallized, chopped
  • 1/2 tsp
    pepper flakes, dried, restaurant type
  • 1 c
    water
  • 2 bag(s)
    cranberries, 12 oz bag each

How to Make Cranberry Fruit Relish

Step-by-Step

  1. With a pair of scissors, cut the apricots and ginger in very small slivers and reserve
  2. Peel, core, and dice apples.
  3. Place rasins, apples, apricots, brown sugar, cranberries, and water into a large sauce pan and simmer till cranberries are tender
  4. Then add the lemon rind, orange rind, ginger and pepper flakes to the hot mixture and cool.
  5. This will keep well in refrigerator for a week and freezes very well in freezer containers. Try adding some on apple pie or apple dessert.
