I serve this with my Salmon Loaf. It is also wonderful with asparagus or simply buttered toast.

Ingredients

3 Tbsp
butter
2 Tbsp
flour
2 c
whole milk
1/4 tsp
salt
1/8 tsp
pepper
4
hard boiled eggs, chopped

How to Make Chopped Egg Sauce

Step-by-Step

  • 1Melt butter in a heavy saucepan over low heat
  • 2Stir in flour increasing heat until mixture bubbles gently
  • 3Cook 2 minutes
  • 4Remove pan from heat, add milk and stir, return to heat stirring constantly
  • 5Stir until mixture comes to a boil
  • 6Reduce heat to medium, stirring constantly adding more milk if mixture becomes too thick
  • 7Season with salt and pepper, add eggs and mix.
