I found this recipe a while ago. Originally, it used jalapenos or red chili peppers. I tried it again with chipotle peppers. That's the ticket.

You can try many variations on this sauce:
- Use honey or molasses in place of the brown sugar
- Try different type of vinegar
- Use more or less chipotles for a different heat level
- Try replacing half the onion with diced sweet red peppers
You can store the excess sauce for several weeks in the refrigerator or freeze for later use.

Ingredients

  • 2
    onions, large white
  • 6 clove
    garlic, minced
  • 6
    chipotle peppers with adobo sauce
  • 1 c
    tomato ketchup
  • 1/2 c
    brewed coffee. strong
  • 1/4 c
    worcestershire sauce
  • 2 Tbsp
    lemon juice
  • 1/4 c
    apple cider vinegar
  • 1/3 c
    brown sugar, packed
  • 2 tsp
    kosher salt
  • 1 Tbsp
    dijon mustard
  • 1/4 tsp
    cayenne pepper (or to taste - careful! heat can overwhelm)

How to Make Sweet Heat Barbecue Sauce

Step-by-Step

  1. Heat 2 tablespoons of oil in a saucepan over medium-high heat
  2. Saute the onion and garlic until translucent, about 3-6 minutes
  3. Place all remaining ingredients into a saucepan and simmer gently for 20-30 minutes
  4. Place in a blender or using an immersion blender (boat motor) and blend the sauce until smooth
  5. Continue simmering until it is the consistency you desire, about another 5-15.
