adobo sauce
This is a good marinade sauce. It is one of more recent discoveries. It has some "bite" to it but if you use this recipe, may adjust. Of course this recipe can be used for a variety of meats .. beef, chicken,PORK(that was the original use), steak, venison... Historically it has several versions mainly : Spanish (South American, Mexican, Spain,Portuguese), & Asian (Filipi, Malaysian,). There is an island adobo too. Mine is the Asian version

1-3 lbs meat
Ingredients
- 1 cup soy sauce, dark
- 2 cloves garlic
- 2 teaspoons sugar
- 2 teaspoons red chili pepper (or powder-use less
- 1 teaspoon cayenne pepper flakes
- 1 teaspoon red pepper or red pepper flakes
- 1/2 stalk scallion
- 1/2- 1 small tomato
How To Make adobo sauce

Step 1Mix all ingredients. Put in bowl and set to side.

Step 2Cut up meat and tomato (peel it)

Step 3Place in bowl 15 - 30 mins. Up to 60 mins I've done

Step 4Take out meat and RESERVE the sauce.…you'll need it

Step 5Fry your meat (stir fry is good).

Step 6Add reserved sauce and bring to boil.

Step 7Simmer for another 10/15 mins or til done.
