adobo sauce

This is a good marinade sauce. It is one of more recent discoveries. It has some "bite" to it but if you use this recipe, may adjust. Of course this recipe can be used for a variety of meats .. beef, chicken,PORK(that was the original use), steak, venison... Historically it has several versions mainly : Spanish (South American, Mexican, Spain,Portuguese), & Asian (Filipi, Malaysian,). There is an island adobo too. Mine is the Asian version

yield 1-3 lbs meat

Ingredients

  • 1 cup soy sauce, dark
  • 2 cloves garlic
  • 2 teaspoons sugar
  • 2 teaspoons red chili pepper (or powder-use less
  • 1 teaspoon cayenne pepper flakes
  • 1 teaspoon red pepper or red pepper flakes
  • 1/2 stalk scallion
  • 1/2- 1 small tomato

How To Make adobo sauce

  • Step 1
    Mix all ingredients. Put in bowl and set to side.
  • Step 2
    Cut up meat and tomato (peel it)
  • Step 3
    Place in bowl 15 - 30 mins. Up to 60 mins I've done
  • Step 4
    Take out meat and RESERVE the sauce.…you'll need it
  • Step 5
    Fry your meat (stir fry is good).
  • Step 6
    Add reserved sauce and bring to boil.
  • Step 7
    Simmer for another 10/15 mins or til done.
