Ingredients

1 Tbsp
mixed pickling spices
1
piece ginger root
4 c
sugar

lemons, thinly sliced
2 lb
firm red, green, yellow tomatoes, peeled

How to Make Tomato Preserves

Step-by-Step

  • 1Tie spices in a cheesecloth bag and add to sugar, lemon, and water.
    Simmer for 15 minutes.
    Add tomatoes and cook gently until tomatoes become clear.
  • 2Stir occasionally to prevent sticking.

    Cover and let stand overnight, in a cool place.
  • 3Heat to boiling.
    Pack tomato pieces and lemon into hot sterile jars, leaving 1/2 inch headspace.
    Remove spice bag from remaining liquid (syrup) and boil for 2 to 4 more minutes.
    Pour hot mixture over tomatoes.
    Wipe jar rims with hot cloth to allow for proper sealing.
  • 4Remove air bubbles from jars, cap, and process in boiling water bath for 20 minutes
