spicy mango pineapple marmalade

This turned out to be a great sweet and spicy combination. It isn't for the faint of heart...it really packs a punch! I made this to enhance chicken wings. I also think it would be great paired with cream cheese as an appetizer. If you don't care for spicy food you could omit the diced pepper and red pepper flakes.

Ingredients

  • 2 1/2 cups mango, peeled and diced
  • 1 cup pineapple, diced - i used canned
  • 1 tablespoon lemon juice
  • 1 - serrano pepper seeded and finely minced
  • 2 tablespoons red pepper flakes
  • 4 cups sugar

How To Make spicy mango pineapple marmalade

  • Step 1
    In a large saucepan on medium heat add all ingredients.
  • Step 2
    Stir to combine and bring to a boil.
  • Step 3
    Reduce and simmer for 15 minutes.
  • Step 4
    Pour into hot sterilized jars to 1/4" to the top.
  • Step 5
    Submerge into hot water bath and process for 15 minutes.
  • Step 6
    Remove and cool. Make sure seals have set properly. If not store in refrigerator or transfer into freezer containers and freeze.
