michael symon's bacon and onion jam
This is not my recipe, I saw Michael Symon cook this on The Chew. He made a grilled cheese with it but I put it on a sandwich made with grilled pork loin and barbeque sauce then grilled it like a grilled cheese. Very good. I was ask to post this recipe is the reason I am posting a Michael Symon recipe.

Ingredients
- 1/2 pound bacon, chopped
- 2 - yellow onions, sliced thin
- 3 cloves garlic, minced, i used garlic in jar
- 2 sprigs thyme, leave, i used dried thyme
- 1/4 cup apple cider vinegar
- 2 tablespoons brown sugar
- 1 tablespoon mustard seed, i used dried mustard powder
- 1/4 cup beer or water
- 1 tablespoon olive oil
- - salt and pepper to taste
How To Make michael symon's bacon and onion jam

Step 1Over medium heat cook bacon until crisp. Remove from skillet. Add onions to skillet in bacon fat and cook over low heat 12-15 minutes or until caramelized stirring occasionally. When done pour off excess fat. Add remaining ingredients to onions, except bacon. Simmer until liquid is reduced by 2/3rds and looks like jam. Remove from heat and stir in bacon.
