michael symon's bacon and onion jam

This is not my recipe, I saw Michael Symon cook this on The Chew. He made a grilled cheese with it but I put it on a sandwich made with grilled pork loin and barbeque sauce then grilled it like a grilled cheese. Very good. I was ask to post this recipe is the reason I am posting a Michael Symon recipe.

Ingredients

  • 1/2 pound bacon, chopped
  • 2 - yellow onions, sliced thin
  • 3 cloves garlic, minced, i used garlic in jar
  • 2 sprigs thyme, leave, i used dried thyme
  • 1/4 cup apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon mustard seed, i used dried mustard powder
  • 1/4 cup beer or water
  • 1 tablespoon olive oil
  • - salt and pepper to taste

How To Make michael symon's bacon and onion jam

  • Step 1
    Over medium heat cook bacon until crisp. Remove from skillet. Add onions to skillet in bacon fat and cook over low heat 12-15 minutes or until caramelized stirring occasionally. When done pour off excess fat. Add remaining ingredients to onions, except bacon. Simmer until liquid is reduced by 2/3rds and looks like jam. Remove from heat and stir in bacon.
