3 Tbspcider vinegar
3 Tbspdark brown sugar
1/3 cred onion, small dice
1/4 csweet bell pepper, red or green, small dice
1/4 cgolden raisins
1 tspfinely minced garlic
1 tspgrated fresh ginger
4 mediumpeaches, skinned, pitted and chopped
How to Make Peach Chutney
- Put vinegar and sugar into a small saucepan. Bring to a boil and add onion, pepper, raisins, garlic and ginger. Simmer for 10 minutes.
- Add peaches and cook about 5 minutes longer. Fruit should keep it's shape.
- Taste to check seasonings and serve warm or cold. Can be refrigerated up to a month.
