Another light, fresh salad that could be served as a delicious side dish at your next cook out. Enjoy!

Ingredients

  • 1 - 15 ounces can, rinsed garbanzo beans
  • 1 medium to large tomato, chopped
  • 3 - 4 - green onions, sliced - plus ends
  • 1 - 1 1/2 ounces cubed, cheddar cheese
  • 1 tablespoon chopped italian parsley or dried
  • finely - chopped red pepper would be a great addition too, i was fresh out
  • DRESSING
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil or your favorite
  • 1/2 teaspoon each - salt, sugar, pepper, chili powder
  • 3/4 teaspoon cumin

How To Make ~ refreshing chick pea salad ~

  • Step 1
    Toss the first 5 ingredients in a medium sized bowl. Whisk the dressing ingredients until well blended. Pour over bean mixture and toss to coat well. Chill well and toss again before serving.
