houston's spicy caesar dressing
This recipe is from a local restaurant (now closed) - not sure if this is their original recipe or a copycat. Feel free to adjust the chili paste if you wish to tone down the heat. : )

Ingredients
- 1 - egg yolk (optional)
- 1 tablespoon garlic, minced or pressed
- 2 teaspoons dijon mustard
- 2 - anchovy fillets, minced
- 1 1/2 teaspoons freshly ground black pepper, coarsely ground
- 1/4 teaspoon salt
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 1 teaspoon worcestershire sauce
- 2 teaspoons cold water
- 1/2 cup extra-virgin olive oil
- 1/2 cup canola oil
- 1 1/2 tablespoons sambal chili past (thai chili paste available in the asian section of grocery)
- 1/2 - lemon, juiced
- 1/2 - lime, juiced
- 3 tablespoons parmesan cheese, freshly grated
How To Make houston's spicy caesar dressing

Step 1Combine the first 10 ingredients (egg yolk through water) in a food processor or blender. Process until smooth.

Step 2With motor running, pour oils in a slow steady stream into dressing mixture. When all oil has been incorporated, add chili paste, lemon and lime juice, and parmesan cheese, Process until smooth.
