This recipe is from a local restaurant (now closed) - not sure if this is their original recipe or a copycat. Feel free to adjust the chili paste if you wish to tone down the heat. : )

Ingredients

  • 1 - egg yolk (optional)
  • 1 tablespoon garlic, minced or pressed
  • 2 teaspoons dijon mustard
  • 2 - anchovy fillets, minced
  • 1 1/2 teaspoons freshly ground black pepper, coarsely ground
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1 teaspoon worcestershire sauce
  • 2 teaspoons cold water
  • 1/2 cup extra-virgin olive oil
  • 1/2 cup canola oil
  • 1 1/2 tablespoons sambal chili past (thai chili paste available in the asian section of grocery)
  • 1/2 - lemon, juiced
  • 1/2 - lime, juiced
  • 3 tablespoons parmesan cheese, freshly grated

How To Make houston's spicy caesar dressing

  • Step 1
    Combine the first 10 ingredients (egg yolk through water) in a food processor or blender. Process until smooth.
  • Step 2
    With motor running, pour oils in a slow steady stream into dressing mixture. When all oil has been incorporated, add chili paste, lemon and lime juice, and parmesan cheese, Process until smooth.
