Personally I'm not a lover of salad or any raw vegetables, and I have this weird allergy to all red foods, along with other weird food allergies.
Back to the point...This is such a unique salad with an incredible mix of flavors. If you are not already a salad-lover, then you will be soon after trying this recipe. I will actually eat this salad and pay with massive discomfort later.
Stick a fork in me I'm done with this subject!!

mixed salad greens
1 large
carrot, julienne cut

grilled chicken breasts, sliced
thin tortilla strips

LIME DRESSING:

1/2 c
fresh lime juice
7 Tbsp
honey
4 tsp
honey mustard
2 clove
garlic, minced
1 tsp
black pepper
1/2 tsp
salt

PEANUT SAUCE:

4 Tbsp
hot water
4 Tbsp
hot water
4 Tbsp
peanut butter
2 tsp
sesame oil
1 Tbsp
ground ginger

How to Make Houston's Grilled Chicken Salad

Step-by-Step

  • 1In a small bowl, combine the lime dressing ingredients and mix well.
  • 2In a large bowl, combine the salad greens, carrots, sliced chicken and tortilla strips.
  • 3Pour the lime dressing over the salad and toss to combine.
  • 4Transfer the salad to 4 salad plates.
  • 5In another bowl, combine the ingredients for the peanut sauce and mix well.
  • 6Drizzle each salad with the peanut sauce and serve.
