fresh cilantro dressing
I love, love, love Mexican-style salads! This is for one reason only... the cilantro dressing! I love it so much that I had to figure it out myself! Now, after trial and error, I have the perfectly refreshing salad dressing. Best when served over a bed of romaine lettuce with grilled chicken or shrimp, tomato, crumbled cotija cheese, and tons of slices of fresh avocado! Mmmm!!

Ingredients
- 1 cup mayonnaise
- 2/3 cup milk
- 1 tablespoon fresh lime juice (may add more to taste)
- 1/2 cup cotija cheese (or other hard cheese i.e. parmesan)
- 2 tablespoons white wine vinegar (may add more to taste)
- 1 tablespoon sugar
- 2 cloves garlic (large and peeled)
- 1/2 small onion
- 1 teaspoon salt
- 1/4 teaspoon ground cumin
- 1/2 teaspoon ground cayenne
- 1/4 teaspoon pepper
- 1 bunch fresh cilantro
- 1/2 cup pine nuts
How To Make fresh cilantro dressing

Step 1In a food processor or blender, combine all the ingredients listed and pulsate until smooth.

Step 2Serve over salad, use as a dip, or add to your fish tacos. So yummy!
