festive dip or festive mac salad
Gram used to serve this as a dip...I got the brilliant idea of mixing with macaroni, and it makes a delicious salad. I'm showing it both ways in added photos. If using as a dip, it's best served the day it's made. Using for a creamy macaroni salad can be kept for a couple days ahead, once refrigerated.. Enjoy!

Ingredients
- 3 - eggs
- 3 tablespoons sugar
- 3 tablespoons vinegar
- 1 teaspoon butter
- 1- 8 ounces softened, cream cheese
- 1 - each - small red pepper & green pepper - chopped
- salt - & pepper to taste
- small - onion, chopped
- FOR MACARONI SALAD
- 1/2 pound cooked macaroni
- 4 - 5 - boiled eggs, shelled and chopped
- 1/2 teaspoon ground mustard - optional
- other - seasonings if preferred
- add - other veggies if you prefer
How To Make festive dip or festive mac salad

Step 1I take a medium pan, filled 3/4 of the way with water. Bring to a boil. Take a pan one size smaller so that it will fit inside pan with water. Place beaten eggs, vinegar & sugar, and whisk until thickened. Remove from heat.

Step 2Immediately whisk in the butter & cream cheese. Add peppers, onion and the salt & pepper to taste . Can be served as a dip after chilled, for chips or veggies.

Step 3If using for macaroni salad, add ground mustard and other seasonings if you prefer. Toss with cooked macaroni and some chopped boiled eggs and you have one delicious macaroni salad.
