I love caesar dressing, but so many taste too eggy and then there's the whole raw egg issue. I found this awhile back (America's Test Kitchen, maybe?) and it reminds me a lot of Carabba's (one of my fav places to eat) caesar dressing.

Ingredients

Add to Grocery List

  • 1/2 c
    mayonnaise (do not use lite or fat free)
  • 1/4 c
    finely grated parmesan cheese
  • 1/4 c
    olive oil
  • 1 1/2 tsp
    anchovy paste (or 2 anchoves, rinsed & patted dry)
  • 1 Tbsp
    lemon juice
  • 1 Tbsp
    white wine vinegar
  • 1 Tbsp
    worcestershire sauce
  • 1 Tbsp
    dijon mustard
  • 1/2 tsp
    salt
  • 1/2 tsp
    pepper
  • 1 clove
    garlic

How to Make Classic Caesar Dressing

Step-by-Step

  1. In blender, combine all ingredients except olive oil. you can pre-chop the garlic, but usually the blender minces it up just as well.
  2. With blender running, slowly pour in olive oil. Pour into small container and store in refrigerator.
