Years ago, I found this on the back of a Pepperidge Farm Crouton box. They called for anchovies that you ground into a paste; I opted for store bought anchovy paste.

Ingredients

    romaine lettuce head, washed and torn
  • 1/2 tube(s)
    anchovy paste
  • 1/2 tsp
    freshly ground pepper
  • 1 Tbsp
    freshly squeezed lemon juice
  • 1/4 c
    egg substitute
  • 1/3 c
    olive oil
  • 2 clove
    garlic, crushed
  • ·
    parmesan cheese, freshly grated
  • ·
    croutons

How to Make Caesar Salad

Step-by-Step

  1. Wash and spin romaine ahead of time and crisp in the refrigerator.
  2. Mix garlic, pepper, lemon juice, egg substitute, anchovy paste and olive oil.
  3. Pour dressing over Romaine, sprinkle Parmesan and croutons and toss well.
