Years ago, I found this on the back of a Pepperidge Farm Crouton box. They called for anchovies that you ground into a paste; I opted for store bought anchovy paste.

Ingredients

  • 1 - romaine lettuce head, washed and torn
  • 1/2 tube anchovy paste
  • 1/2 teaspoon freshly ground pepper
  • 1 tablespoon freshly squeezed lemon juice
  • 1/4 cup egg substitute
  • 1/3 cup olive oil
  • 2 cloves garlic, crushed
  • - parmesan cheese, freshly grated
  • - croutons

How To Make caesar salad

  • Step 1
    Wash and spin romaine ahead of time and crisp in the refrigerator.
  • Step 2
    Mix garlic, pepper, lemon juice, egg substitute, anchovy paste and olive oil.
  • Step 3
    Pour dressing over Romaine, sprinkle Parmesan and croutons and toss well.
