My boyfriends dad gave me this recipe. Perfect timing too as my sister had a bunch of zucchini given to her. So we tried it out. Turned out pretty good!

    shredded zucchini
  • 2
    green peppers
  • 2
    red peppers
  • 1/2
  • 5 c
  • 3 c
    white vinegar
  • 1 1/2 tsp
  • 3 Tbsp
    mustard seed
  • 1 1/2 tsp
    celery seed
  • 1/2 c

How to Make Zucchini Relish


  1. Shred or FINELY chop zucchini, peppers and onion. Put in large bowl mix together,and add 1/2 cup salt and mix again. Add water and ice and place in fridge overnight.
  2. DAY 2: drain and rinse zucchini mixture and put in large pot. Add sugar, white vinegar, turmeric, mustard seed and celery seed. Simmer for 30 minutes stirring occasionally.
  3. Put in jars and seal.
