zucchini relish

My boyfriends dad gave me this recipe. Perfect timing too as my sister had a bunch of zucchini given to her. So we tried it out. Turned out pretty good!

Ingredients

  • 16 cups shredded zucchini
  • 2 - green peppers
  • 2 - red peppers
  • 1/2 - onion
  • 5 cups sugar
  • 3 cups white vinegar
  • 1 1/2 teaspoons turmeric
  • 3 tablespoons mustard seed
  • 1 1/2 teaspoons celery seed
  • 1/2 cup salt

How To Make zucchini relish

  • Step 1
    Shred or FINELY chop zucchini, peppers and onion. Put in large bowl mix together,and add 1/2 cup salt and mix again. Add water and ice and place in fridge overnight.
  • Step 2
    DAY 2: drain and rinse zucchini mixture and put in large pot. Add sugar, white vinegar, turmeric, mustard seed and celery seed. Simmer for 30 minutes stirring occasionally.
  • Step 3
    Put in jars and seal.
