How to Make Skordalia (Potato Garlic Dip)
- This is best if done in a mortar....Peel potatoes , cut into pieces & boil till fork tender.
- meanwhile in a mortar, place the garlic salt & pepper and mash till forming a paste.
- add potatoes a few pieces at a time and keep mashing till well combined, then add in the olive oil and vinegar and also combine well...serve room temperature as a dip...perfect for dipping fried calamari.
