Skordalia (Potato Garlic Dip)
- potatoes, peeled
- garlic cloves
- 2 Tbsp
- olive oil
- 1 Tbsp
- white vinegar
- salt/pepper to taste
How to Make Skordalia (Potato Garlic Dip)
- 1This is best if done in a mortar....Peel potatoes , cut into pieces & boil till fork tender.
- 2meanwhile in a mortar, place the garlic salt & pepper and mash till forming a paste.
- 3add potatoes a few pieces at a time and keep mashing till well combined, then add in the olive oil and vinegar and also combine well...serve room temperature as a dip...perfect for dipping fried calamari.
