A very easy and basic Guacamole that is a family favorite at our house. Putting the avocado seeds back into the Guacamole will keep it from browning as quickly before consumption.

Note - Muddling (crushing) the red onions and Cilantro at the beginning is the secret to adding some great depth of flavor!

Enjoy!

Ingredients

3
ripe avocados
1 Tbsp
red onion, diced
1 Tbsp
fresh cilantro, diced fine
1 Tbsp
olive oil, extra virgin
3 clove
garlic - diced
2 tsp
kosher salt
1/4 c
fresh lime juice
1/4 c
chopped tomatoes
1/2
jalapeno, seeded (optional)

Step-By-Step

1Remove seeds from Avocado - an easy way to do this after 'twisting off' the first half is to strike the seed with the sharp edge of a large kitchen knife, then twist the seed (and knife) and avocado in opposite directions.
2Muddle the red onions and cilantro to release the juices and flavors
3Add avocados and mash with a fork (or mortar and pestle) to preferred consistency
4mix in salt, oil, lime juice, garlic, and tomatoes, adjust to taste.
5Add Diced and seeded Jalapeno for an extra kick!
