simple authentic guacamole

A very easy and basic Guacamole that is a family favorite at our house. Putting the avocado seeds back into the Guacamole will keep it from browning as quickly before consumption. Note - Muddling (crushing) the red onions and Cilantro at the beginning is the secret to adding some great depth of flavor! Enjoy!

Ingredients

  • 3 - ripe avocados
  • 1 tablespoon red onion, diced
  • 1 tablespoon fresh cilantro, diced fine
  • 1 tablespoon olive oil, extra virgin
  • 3 cloves garlic - diced
  • 1 teaspoon kosher salt or more to taste
  • 1/4 cup fresh lime juice
  • 1/4 cup chopped tomatoes
  • 1/2 - jalapeno, seeded (optional)

How To Make simple authentic guacamole

  • Step 1
    Remove seeds from Avocado - an easy way to do this after 'twisting off' the first half is to strike the seed with the sharp edge of a large kitchen knife, then twist the seed (and knife) and avocado in opposite directions.
  • Step 2
    Muddle the red onions and cilantro to release the juices and flavors
  • Step 3
    Add avocados and mash with a fork (or mortar and pestle) to preferred consistency
  • Step 4
    mix in salt, oil, lime juice,garlic, and tomatoes, adjust to taste.
  • Step 5
    Add Diced and seeded Jalapeno for an extra kick!
