simple authentic guacamole
A very easy and basic Guacamole that is a family favorite at our house. Putting the avocado seeds back into the Guacamole will keep it from browning as quickly before consumption. Note - Muddling (crushing) the red onions and Cilantro at the beginning is the secret to adding some great depth of flavor! Enjoy!

Ingredients
- 3 - ripe avocados
- 1 tablespoon red onion, diced
- 1 tablespoon fresh cilantro, diced fine
- 1 tablespoon olive oil, extra virgin
- 3 cloves garlic - diced
- 1 teaspoon kosher salt or more to taste
- 1/4 cup fresh lime juice
- 1/4 cup chopped tomatoes
- 1/2 - jalapeno, seeded (optional)
How To Make simple authentic guacamole

Step 1Remove seeds from Avocado - an easy way to do this after 'twisting off' the first half is to strike the seed with the sharp edge of a large kitchen knife, then twist the seed (and knife) and avocado in opposite directions.

Step 2Muddle the red onions and cilantro to release the juices and flavors

Step 3Add avocados and mash with a fork (or mortar and pestle) to preferred consistency

Step 4mix in salt, oil, lime juice,garlic, and tomatoes, adjust to taste.

Step 5Add Diced and seeded Jalapeno for an extra kick!
