I had loads of fresh basil to use up. Since I did not have pine nuts on hand, I made a simple substitution and Voila! This tastes wonderfully on pasta, but I also use it to make cheddar pesto scones. Yummy!

Ingredients

  • 1 cup almonds
  • 2-3 cups fresh basil
  • 3 cloves garlic
  • 1 cup olive oil
  • 1/2 cup grated parmesan cheese
  • - salt and pepper to taste

How To Make almond pesto

  • Step 1
    Put almonds in food processor. Chop finely.
  • Step 2
    Add fresh basil, garlic, and olive oil to nuts. Mix well until basil is finely diced.
  • Step 3
    Mix in the cheese and salt and pepper to taste. Enjoy as a dip for breads, over pasta or as a flavoring for cheddar pesto scones.
  • Step 4
    You can vary the amount of olive oil, add more or less basil, and amount of cheese to your liking.
