almond pesto
I had loads of fresh basil to use up. Since I did not have pine nuts on hand, I made a simple substitution and Voila! This tastes wonderfully on pasta, but I also use it to make cheddar pesto scones. Yummy!

Ingredients
- 1 cup almonds
- 2-3 cups fresh basil
- 3 cloves garlic
- 1 cup olive oil
- 1/2 cup grated parmesan cheese
- - salt and pepper to taste
How To Make almond pesto

Step 1Put almonds in food processor. Chop finely.

Step 2Add fresh basil, garlic, and olive oil to nuts. Mix well until basil is finely diced.

Step 3Mix in the cheese and salt and pepper to taste. Enjoy as a dip for breads, over pasta or as a flavoring for cheddar pesto scones.

Step 4You can vary the amount of olive oil, add more or less basil, and amount of cheese to your liking.
