I had loads of fresh basil to use up. Since I did not have pine nuts on hand, I made a simple substitution and Voila!
This tastes wonderfully on pasta, but I also use it to make cheddar pesto scones. Yummy!

Ingredients

1 c
almonds
2-3 c
fresh basil
3 clove
garlic
1 c
olive oil
1/2 c
grated parmesan cheese
salt and pepper to taste

Step-By-Step

1Put almonds in food processor. Chop finely.
2Add fresh basil, garlic, and olive oil to nuts. Mix well until basil is finely diced.
3Mix in the cheese and salt and pepper to taste. Enjoy as a dip for breads, over pasta or as a flavoring for cheddar pesto scones.
4You can vary the amount of olive oil, add more or less basil, and amount of cheese to your liking.
