This spicy vinegar is said to be as common as ketchup in the Yucatan Peninsula of Mexico. Add a few drops or splashes to liven up a dish. The pickled pepper slices can be minced and added to guacamole, beans & rice, or any dish that you like. If you make this without wearing gloves, don't touch your eyes afterwards!

Ingredients
- 4 orange or yellow fresh habanero chile peppers
- 1 lime, sliced
- 1/4 salt
- white vinegar, as needed
How To Make yucatan gold

Step 1Preheat oven to 200 degrees F. Roast whole chiles for 1 hour.

Step 2Cool. Cut in half and remove stems and seeds. Then cut into quarters or strips.

Step 3Place in a jar with 4 lime slices, salt, and cover with vinegar.

Step 4Seal the jar and let it sit for at least one day. It will get hotter the longer it sits. Because it is in vinegar, it will keep for a long time in the refrigerator.
