Texas Summer Salsa

Vickie Parks

This is a salsa recipe that has bits of summer melons for a fruity touch. Prep time doesn't include chilling time as that can vary greatly.

1/2 small
honeydew melon, seeded
1/2 small
cantaloupe, seeded
1/3 large
jalapeño pepper, seeded and diced
1/4 c
fresh cilantro, chopped
2 Tbsp
fresh lime juice
15 oz
jar salsa
1 large
bag totrtilla chips (scoops work well)

1Finely chop the honeydew and cantaloupe. Place chopped fruit in a colander for 30 minutes to allow all excess liquid to drain.
2Add the chopped jalapeño and cilantro to the fruit, and stir until well combined.
3Mix salsa and lime juice together in a bowl. Add the fresh fruit mixture, and mix well with wooden spoon. Transfer to festive serving bowl if desired, and chill until ready to serve.
4When ready to serve, place salsa bowl in center of a large serving platter, and arrange tortilla chips around the salsa bowl.
