Ingredients

  • 6 - fresh tomatillos, husked, & halved
  • 1 cup water
  • 1 - ripe avocado, halved, seeded & peeled
  • 1/2 cup loosely packed fresh cilantro leaves
  • 1/3 cup sour cream
  • 1 - jalapeno, seeded, & coarsely chopped
  • 1/2 teaspoon salt
  • 1 cup coarsely chopped green onions

How To Make tangy tomatillo-avocado salsa

  • Step 1
    IN MEDIUM PAN, COMBINE TOMATILLOS & WATER. BRING TO A BOIL, REDUCE HEAT. SIMMER, UNCOVERED FOR 5-7 MINS. OR UNTIL TENDER, STIRRING OCCASIONALLY.
  • Step 2
    USING SLOTTED SPOON, TRANSFER TOMATILLOS TO FOOD PROCESSOR OR BLENDER, COOL SLIGHTLY. ADD 2 T. OF THE LIQUID.
  • Step 3
    ADD AVOCADO, GREEN ONIONS, CILANTRO, SOUR CREAM, JALAPENO, & SALT TO BLENDER OR FOOD PROCESSOR. COVER & PROCESS UNTIL SLIGHTLY CHUNKY. TRANSFER TO COVERED CONTAINER, CHILL FOR 1-24 HRS. CAN SERVE WITH GRILLED MEAT OR POULTRY.
