Ingredients

  • 4 large ripe tomatoes
  • 2 - green chili peppers, seeded, and finely chopped
  • 2 cloves garlic, finely chopped
  • 1 teaspoon dried mint
  • 1/4 teaspoon each paprika and chili powder
  • 1 teaspoon freshly ground black pepper
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon tomato puree
  • - salt to taste
  • 1/4 bunch parsley, chopped
  • 2 tablespoons pomegranate molasses
  • 1/2 teaspoon sumac

How To Make spicy tomato and pepper dip

  • Step 1
    Chop peeled tomatoes, onion, garlic and parsley very finely -- may pulse in a food processor or chop by hand. Remove seeds and membrane from chilies and chop very finely until they become a textured paste.
  • Step 2
    Add the olive oil, lemon juice, and pomegranate molasses - mix well. Add in the pepper paste and mix until smooth.
  • Step 3
    Add this mixture into the salad ingredients. Add salt and remaining spices, including mint, and mix well. Refrigerate for at least 1/2 hour - then serve.
