4 lgripe tomatoes

2green chili peppers, seeded, and finely chopped

2 clovegarlic, finely chopped

1 tspdried mint

1/4 tspeach paprika and chili powder

1 tspfreshly ground black pepper

3 Tbspolive oil

2 Tbsplemon juice

1 tsptomato puree

salt to taste

1/4 bunchparsley, chopped

2 Tbsppomegranate molasses

How To Make spicy tomato and pepper dip

1Chop peeled tomatoes, onion, garlic and parsley very finely -- may pulse in a food processor or chop by hand. Remove seeds and membrane from chilies and chop very finely until they become a textured paste.

2Add the olive oil, lemon juice, and pomegranate molasses - mix well. Add in the pepper paste and mix until smooth.

3Add this mixture into the salad ingredients. Add salt and remaining spices, including mint, and mix well. Refrigerate for at least 1/2 hour - then serve.
