Got a bargain on some fresh tomatoes and some spaghetti sauce...had to put up some Salsa

Ingredients

  • 3 medium
    spanish onions
  • 15 medium
    ripe tomatoes
  • 1 bunch
    celery stalks
  • 2
    green bell peppers
  • 2
    orange bell peppers
  • 2
    yellow bell peppers
  • 2 clove
    garlic
  • 2
    jalapino peppers
  • 2 small
    habinero peppers
  • 4 medium
    banana peppers
  • 2 Tbsp
    lemon juice
  • 1/3 c
    apple cider vinegar
  • 1 pkg
    chili seasoning mix
  • 1 jar(s)
    traditional spagetti sauce
  • 1 tsp
    salt
  • 1 Tbsp
    garlic powder
  • 1 Tbsp
    cilantro, dried
  • 1/4 c
    clear jel

How to Make Spanish Onion Salsa

Step-by-Step

  1. Add lemon juice, celery, garlic cloves to food processor, blend, and add to pot on stove on warm
  2. slice, de-seed all peppers and put in food processor, blend, add to pot
  3. add onions and powdered garlic to food processor, blend, add to pot on stove
  4. add spaghetti sauce, apple cider vinegar clear gel salt, cilantro, chili seasoning mix to pot and bring to medium heat and simmer
  5. blanch tomatoes in boiling water for 1 minute, drop into ice water, slide off skins, slice, remove cores, and add to food processor...blend, then add to pot on stove and bring all to a boil, remove from heat
  6. Ladle into prepared pint jars leaving 1/4 head space, and process in water bath canner for 15 minutes...makes 7 to 8 pints
