pico de gallo
I love pico de gallo but most people put to much cilantro for my taste. I played around with this until i got it the way i liked it. It is the perfect compliment to my tacos made with the machaca...mmmm..yummy goodness!!!

Ingredients
- 5-6 - roma tomatoes..seeded and chopped
- 1 small yellow onion diced really small
- 1 small fresh jalapeno pepper seeded and chopped
- 1 tablespoon olive oil
- 2 tablespoons chopped fresh cilantro very fine
- 2 cloves fresh garlic minced
- 1 large lime juice only
- 1 teaspoon salt
- 1/4 teaspoon chipoltle chile pepper(or red pepper)
