pico de gallo

I love pico de gallo but most people put to much cilantro for my taste. I played around with this until i got it the way i liked it. It is the perfect compliment to my tacos made with the machaca...mmmm..yummy goodness!!!

Ingredients

  • 5-6 - roma tomatoes..seeded and chopped
  • 1 small yellow onion diced really small
  • 1 small fresh jalapeno pepper seeded and chopped
  • 1 tablespoon olive oil
  • 2 tablespoons chopped fresh cilantro very fine
  • 2 cloves fresh garlic minced
  • 1 large lime juice only
  • 1 teaspoon salt
  • 1/4 teaspoon chipoltle chile pepper(or red pepper)

How To Make pico de gallo

  • Step 1
    Chop every really fine and mix togather
  • Step 2
    Serve over just about anything ..its fresh and has a mexican zing
