easy treat to serve on a hot summer day

Ingredients

  • 2 Tbsp
    red onion, finely minced
  • 2 c
    boiling water
  • 1
    mango, firm
  • 1 Tbsp
    lime juice
  • 1 clove
    garlic
  • 1/2 tsp
    salt
  • 2 Tbsp
    cilantro, fresh, minced
  • 1 Tbsp
    Cayenne pepper

How To Make

  • 1
    Place the minced onion in a small strainer in the sink and pour the boiling water over it. This will take some of the bite out of the onion and turn it a striking shade of purple-pink.

    Combine all ingredients and mix gently. Cover tightly and refrigerate for 2 hours or more to allow flavors to blend.
