watermelon, seeds removed and cubed small

fresh corn kernels (i used raw but roasted was specified in the original recipe)
1/2 c
yellow, red or white onion, diced small (i used texas sweet white onion)
1/2 c
cucumber or zucchini, diced small (unpeeled or not)
jalapeno, minced (seeds removed if desired)
1 tsp
lime zest, grated
lime, juice of
1/4-1/2 c
loosely packed fresh cilantro, minced (which i added)

How to Make Lone Star State Watermelon Salsa


  • 1Combine all ingredients in a non-reactive bowl. Cover and chill until serving time.
