Ingredients
- 2 cups watermelon, seeds removed and cubed small
- 1 cup fresh corn kernels (i used raw but roasted was specified in the original recipe)
- 1/2 cup yellow, red or white onion, diced small (i used texas sweet white onion)
- 1/2 cup cucumber or zucchini, diced small (unpeeled or not)
- 1 - jalapeno, minced (seeds removed if desired)
- 1 teaspoon lime zest, grated
- 1 - lime, juice of
- 1/4-1/2 cup loosely packed fresh cilantro, minced (which i added)

Step 1Combine all ingredients in a non-reactive bowl. Cover and chill until serving time.
