    fresh corn kernels (i used raw but roasted was specified in the original recipe)
  • 1/2 c
    yellow, red or white onion, diced small (i used texas sweet white onion)
  • 1/2 c
    cucumber or zucchini, diced small (unpeeled or not)
  • 1
    jalapeno, minced (seeds removed if desired)
  • 1 tsp
    lime zest, grated
  • 1
    lime, juice of
  • 1/4-1/2 c
    loosely packed fresh cilantro, minced (which i added)

How to Make Lone Star State Watermelon Salsa

Step-by-Step

  1. Combine all ingredients in a non-reactive bowl. Cover and chill until serving time.
