- 2 large green bell peppers, diced
- 2 large red bell peppers, diced
- 2 medium jalapeno peppers, sliced
- 1 medium celery stalk, diced
- 1 medium carrot, diced
- 1 large onion, chopped
- 1/2 cup salt
- water
- 5 cloves garlic, minced
- 1 tablespoon oregano, dried
- 1 teaspoon red pepper flakes
- 1 - 5 oz jars olives with pimiento, chopped
- 1 cup white vinegar
- 1 cup olive oil, extra-virgin

Step 1In a large bowl, mix veggies & salt. Fill with enough water to cover. Wrap & refrigerate overnight.

Step 2Drain & rinse veggies.

Step 3In another large bowl, mix remaining ingredients. Combine everything. Refrigerate 2 days - YES I SAID 2 DAYS.

Step 4Enjoy on pizza, sausage, beef or pork sandwiches or anything your heart desires.
