gigi's fresh salsa

Fresh because it's not cooked. If you made it from fresh tomatoes use green chilies as well. I used Rotel tomatoes. This is a riff on a recipe I've been making for years.

Ingredients
- 1 can rotel tomatoes, you octane of choice
- 1 - rib celery, i like the tender inner ribs
- 1/2`` - onion
- 1/2 - bell pepper
- 1/4 teaspoon each, ground jalapeno or cayenne, ground corriander,and celery salt
- 1 teaspoon dried cilantro.. 1t ch fresh
- 1 teaspoon ground mustard seed, tarragon, sugar, garlic powder
- - salt to taste
- - juice of one lime or lemon
- 1/4 cup olive oil

Step 1Chop the vegetables fine Pour Rotel tomatoes into a medium sized bowl and add the vegetables. Add spices, oil and juice

Step 2Adjust sale and let stand at room temp about an hour for flavors to meld.

Step 3Serve with tacos, as a dip, or on meats. Keeps about 3 days.
