Fresh because it's not cooked. If you made it from fresh tomatoes use green chilies as well. I used Rotel tomatoes. This is a riff on a recipe I've been making for years.

rotel tomatoes, you octane of choice
rib celery, i like the tender inner ribs
bell pepper
1/4 tsp
each, ground jalapeno or cayenne, ground corriander,and celery salt
1 tsp
dried cilantro.. 1t ch fresh
1 tsp
ground mustard seed, tarragon, sugar, garlic powder
salt to taste
juice of one lime or lemon
1/4 c
olive oil

How to Make Gigi's Fresh Salsa


  • 1Chop the vegetables fine
    Pour Rotel tomatoes into a medium sized bowl and add the vegetables. Add spices, oil and juice
  • 2Adjust sale and let stand at room temp about an hour for flavors to meld.
  • 3Serve with tacos, as a dip, or on meats.
    Keeps about 3 days.
