"This fruity & spicy salsa is yummy on just about everything from tortilla chips to regular or barbequed chicken, fish & tacos. No more store bought stuff for me!

Ingredients

  • SALSA:
  • 2 large mangos, peeled, seeded & chopped
  • 4 large peaches, halved, pitted & cut into 1/2
  • 2 cans tomatoes, diced with onion & garlic, undrained
  • 1 - onion, diced
  • 1/2 small yellow bell pepper, finely diced
  • 1/2 small green bell pepper, finely diced
  • 2 - 8 oz. cans pineapple, crushed, drained but juice reserved for dressing
  • 1/8 - 1/2 cup cilantro, fresh, chopped
  • 1 - 2 - jalapeno peppers, seeded & finely chopped, to taste (optional)
  • DRESSING:
  • 4 - 5 cloves garlic, minced
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1/2 cup pineapple juice, reserved from pineapple (above)
  • 1/2 - 3/4 cups looza peach juice
  • 1/2 - 3/4 cups looza mango juice
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper
  • 1 tablespoon olive oil, extra virgin

How To Make fruity salsa

  • Step 1
    MAKE DRESSING: In a large mason jar with lid, add in the garlic, lime juice, salt, sugar, pineapple, peach & mango juices, black & cayenne peppers & olive oil; shake. Cover & refrigerate at least 1 hour before pouring over salsa mixture.
  • Step 2
    SALSA: In a large bowl, place the mangos, peaches, tomato, onion, yellow & green peppers, pineapple, cilantro & jalapeno (if using) in a mixing bowl. Shake dressing mixture one more time, then pour over salsa mixture. Cover & refrigerate 1 hour or more for flavors to marry together.
