This salsa is great for parties and perfect for summer cook outs! You can exchange the green bell pepper for a jalapeno if you like the heat.

Ingredients

  • 1 can black beans (15 oz)
  • 1 1/2 cups frozen corn, thawed
  • 1 cup chopped red bell pepper
  • 3/4 cup chopped green bell pepper
  • 1/2 cup chopped red onion
  • 1 tablespoon minced fresh parsley
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons red wine vinegar
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper

How To Make creamy black bean salsa

  • Step 1
    In a large bowl, combine the beans, corn, peppers, onion, and parsley.
  • Step 2
    In a separate bowl, combine the sour cream, mayonnaise, vinegar, and seasonings. Pour over the corn mixture and toss gently to coat.
