This is a big hit for parties and a nice change from tomato salsa. I got this recipe from a coworker years ago.

The name of this recipe is perfect because it tastes like salsa with corn. This salsa is creamy and sweet with a little tang and spice. It's a nice change from traditional salsa and can be served in an assortment of ways. Serve with chips as a dip or on top of nachos, burrito bowls, or tacos.

Ingredients
- 2 cans Mexican blend corn (11 oz)
- 2 cups sharp cheddar cheese, shredded
- 1 cup mayonnaise
- 1 cup sour cream
- 1/2 cup pickled jalapeno
- 4 ounces diced pimentos
- 1 tablespoon garlic powder
- 1 teaspoon Adobo (optional)
How To Make corn salsa

Step 1In a bowl, mix sour cream and mayonnaise.
