A garden summer time favorite as I always have too much cilantro growing! I use this on grilled shrimp, chicken, steaks,as a marinade and even on eggs. It's versatile and good for you. Can use as a tappenade as well...

Ingredients

  • 3 cups fresh cilantro
  • 1/2 cup pistachio,pinon or pumpkin seeds raw is best
  • 2-3 - cloves garlic
  • 1/4 cup olive oil, extra virgin
  • 1 - juice of 1 lemon or lime
  • 2 pinches sea salt
  • 1 - finely diced jalapeno
  • 1/2 cup parmigiano-reggiano, grated or feta cheese

How To Make cilantro pesto

  • Step 1
    Blend all ingredients in food processor until mixed well.Let stand for 1 hour in refrigerator before using. can be used immediately for a marinade.
