Ingredients

  • 2 tablespoons olive oil
  • 1 cup coarsely chopped onion
  • 1 cup coarsely diced green bell pepper
  • 35 ounces tomato - drained - coarsely chopped
  • 1/2 cup of the reserved tomato juice
  • 1 tablespoon lime juice
  • 2 teaspoons tabasco sauce
  • 1/2 teaspoon salt
  • 2 tablespoons chopped cilantro

How To Make chunky salsa

  • Step 1
    Heat oil in large saucepan over high heat
  • Step 2
    Add onion and bell pepper
  • Step 3
    Saute 5-6 min stirring frequently until tender
  • Step 4
    Add tomatoes and juice
  • Step 5
    Bring to a boil over high heat
  • Step 6
    Reduce heat to low and simmer 6-8 minutes - stirring occasionally until salsa is slightly thickened
  • Step 7
    Remove from heat
  • Step 8
    Stir in lime juice and tabasco to taste
  • Step 9
    Add salt
  • Step 10
    Cool to luke warm
  • Step 11
    Stir in cilantro
