Ingredients For chunky salsa

  • 2 Tbsp
    olive oil
  • 1 c
    coarsely chopped onion
  • 1 c
    coarsely diced green bell pepper
  • 35 oz
    tomato - drained - coarsely chopped
  • 1/2 c
    of the reserved tomato juice
  • 1 Tbsp
    lime juice
  • 2 tsp
    tabasco sauce
  • 1/2 tsp
    salt
  • 2 Tbsp
    chopped cilantro

How To Make chunky salsa

    Heat oil in large saucepan over high heat
  • 2
    Add onion and bell pepper
  • 3
    Saute 5-6 min stirring frequently until tender
  • 4
    Add tomatoes and juice
  • 5
    Bring to a boil over high heat
  • 6
    Reduce heat to low and simmer 6-8 minutes - stirring occasionally until salsa is slightly thickened

    Remove from heat

    Stir in lime juice and tabasco to taste

    Add salt

    Cool to luke warm

    Stir in cilantro
