Tortilla chips aside, this is also good over grilled fish or chicken. Variation: Try it with honeydew melon or a combination of the two. * Just a reminder....be sure to wear gloves when chopping hot chiles, and wash hands thoroughly afterwards!

Ingredients

  • 2 cups (1/4 inch) diced cantaloupe melon, from a 2 1/4 lb piece
  • 1/4 cup (1/4 inch) diced vidalia or red onion
  • 2 tablespoons chopped fresh cilantro or basil
  • 1 - (2 inch long) hot red or green chile, minced*
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon salt

How To Make cantaloupe salsa

  • Step 1
    Mix all ingredients together in a medium bowl. Cover and refrigerate for at least 2 hours. Serve with tortilla chips.
  • Step 2
    * Remove the seeds of the chile if you want to lessen the heat.
