This is a recipe from Hosmer Winery in the Fingerlakes. A friend and myself went on the "Mardi Gras" Trail Event this past March and this is one of the delicious recipes we collected on the trail.

3/4 c
apple cider vinegar
3/4 c
vegetable oil
3 can(s)
(15 oz) black beans, drained & rinsed
3 can(s)
(15 oz) shoe peg corn, drained & rinsed
1 bunch
scallions, chopped
1 bunch
cilantro, chopped
1 c
feta cheese, crumbled

How to Make Black Bean and Feta Salsa


  • 1Whisk the sugar, vinegar and oil in a large bowl. Add the black beans, corn, scallions, cilantro and cheese and mix well. Chill until serving time. Serve with tortilla chips.
