black bean and feta salsa

This is a recipe from Hosmer Winery in the Fingerlakes. A friend and myself went on the "Mardi Gras" Trail Event this past March and this is one of the delicious recipes we collected on the trail.

Ingredients

  • 1/2 cup sugar
  • 3/4 cup apple cider vinegar
  • 3/4 cup vegetable oil
  • 3 cans (15 oz) black beans, drained & rinsed
  • 3 cans (15 oz) shoe peg corn, drained & rinsed
  • 1 bunch scallions, chopped
  • 1 bunch cilantro, chopped
  • 1 cup feta cheese, crumbled

How To Make black bean and feta salsa

  • Step 1
    Whisk the sugar, vinegar and oil in a large bowl. Add the black beans, corn, scallions, cilantro and cheese and mix well. Chill until serving time. Serve with tortilla chips.
