This is a recipe from Hosmer Winery in the Fingerlakes. A friend and myself went on the "Mardi Gras" Trail Event this past March and this is one of the delicious recipes we collected on the trail.

Ingredients

  • 1/2 c
    sugar
  • 3/4 c
    apple cider vinegar
  • 3/4 c
    vegetable oil
  • 3 can(s)
    (15 oz) black beans, drained & rinsed
  • 3 can(s)
    (15 oz) shoe peg corn, drained & rinsed
  • 1 bunch
    scallions, chopped
  • 1 bunch
    cilantro, chopped
  • 1 c
    feta cheese, crumbled

How to Make Black Bean and Feta Salsa

Step-by-Step

  1. Whisk the sugar, vinegar and oil in a large bowl. Add the black beans, corn, scallions, cilantro and cheese and mix well. Chill until serving time. Serve with tortilla chips.
