From a Texas chuckwagon chef, an awesome fajita seasoning mix. He rubs this liberally on chicken breasts, beef skirts, shrimp or portobellos - and lets them marinate in it for about an hour or so before grilling. Although I posted the recipe in "teaspoons", chef John Hausen writes his spice recipes in “parts,” not specific measures. This makes it easy to knock out a batch, whether it is one cup or 5 gallons, and it will come out perfect every time. He says "Just grab something to measure with and follow the recipe!"

Ingredients

  • 3 teaspoons sweet paprika
  • 3 teaspoons chili powder
  • 3 teaspoons coarse black pepper
  • 2 teaspoons granulated garlic
  • 2 teaspoons cumin
  • 2 teaspoons sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon dried cilantro
  • 1/4 teaspoon allspice

  • Step 1
    Dump in an appropriately sized bowl and mix with whisk for 4 minutes. Store in airtight container in a cool dark place.
