tzatziki sauce
I have a real soft spot for Greek Lamb Souvlaki and rice. I could eat it once a week! But it's just not the same without the Tzatziki sauce! (Trust me, I tried!) I found this recipe on the internet somewhere, adapted it just a tiny bit, and it works wonderfully. And it's SO easy. Hope you enjoy as much as we do!

Ingredients
- 2 cups Greek yogurt
- 1 large cucumber
- 1/4 medium white onion
- 2 tablespoons lemon juice
- 1 tablespoon ground dill weed
- 1 tablespoon minced garlic
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
How To Make tzatziki sauce

Step 1Drain excess water off the yogurt. (I do this with a fine sieve.)

Step 2Meanwhile, peel and then cut the cucumber in half longways. Using a spoon, remove all the seeds.

Step 3Grate the cucumber. (This is another sieve moment - good thing I have a few - but if you don't, place the grated cucumber in a coffee filter in a colander to drain.)

Step 4Finely mince the onion. Allow extra juices to run off with the grated cucumber. (I usually allow this for about 1/2 hour.)

Step 5Add all ingredients to a covered bowl and mix well. Refrigerate at least one hour. Though this is good after the one hour refrigeration, it is even better the next day.
