tzatziki sauce

I have a real soft spot for Greek Lamb Souvlaki and rice. I could eat it once a week! But it's just not the same without the Tzatziki sauce! (Trust me, I tried!) I found this recipe on the internet somewhere, adapted it just a tiny bit, and it works wonderfully. And it's SO easy. Hope you enjoy as much as we do!

Ingredients

  • 2 cups Greek yogurt
  • 1 large cucumber
  • 1/4 medium white onion
  • 2 tablespoons lemon juice
  • 1 tablespoon ground dill weed
  • 1 tablespoon minced garlic
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

How To Make tzatziki sauce

  • Step 1
    Drain excess water off the yogurt. (I do this with a fine sieve.)
  • Step 2
    Meanwhile, peel and then cut the cucumber in half longways. Using a spoon, remove all the seeds.
  • Step 3
    Grate the cucumber. (This is another sieve moment - good thing I have a few - but if you don't, place the grated cucumber in a coffee filter in a colander to drain.)
  • Step 4
    Finely mince the onion. Allow extra juices to run off with the grated cucumber. (I usually allow this for about 1/2 hour.)
  • Step 5
    Add all ingredients to a covered bowl and mix well. Refrigerate at least one hour. Though this is good after the one hour refrigeration, it is even better the next day.
