5 ozpancetta, diced

How to Make Tomato Sauce
- Heat oil in a large pot over medium heat. Add onion, carrots and pancetta and cook until onions are translucent (about 10 minutes).
- Add tomatoes, generously season with salt and add crushed red pepper. Mix well, lower heat to simmer and cover. Sauce will begin to cook down.
- Continue cooking until sauce gets to your prefered consistancy (Approx 45 min to 1 hour). Stir often so as not to burn on the bottom. Also taste to ensure that sauce has proper seasoning.
- Serve with your favorite pasta and parmigiano reggiano.
