Ingredients

  • 1 can artichokes, canned and chopped, liquid reserved
  • 3 large tomatoes, fresh and chopped
  • 5 - garlic cloves, crushed
  • 1 large onion, chopped
  • 2 tablespoons flour
  • 1 cup water, cold
  • - milk
  • 1/2 cup basil, fresh chopped
  • - spinach noodles, cooked and drained

How To Make tomato/artichoke pesto pasta sauce

  • Step 1
    Saute onion in vinegar.
  • Step 2
    Add can of artichokes and liquid - make sure the pieces are bite-sized.
  • Step 3
    Mix flour with cold water; add to artichoke mixture and stir while cooking for approximately 5 minutes.
  • Step 4
    Skim milk can be added to thin mixture.
  • Step 5
    Add the chopped tomatoes, and basil and cook for another 10-15 minutes; serve over spinach noodles.
