Ingredients

  • 1 can(s)
    artichokes, canned and chopped, liquid reserved
  • 3 large
    tomatoes, fresh and chopped
  • 5
    garlic cloves, crushed
  • 1 large
    onion, chopped
  • 2 Tbsp
    flour
  • 1 c
    water, cold
  • ·
    milk
  • 1/2 c
    basil, fresh chopped
  • ·
    spinach noodles, cooked and drained

How to Make Tomato/Artichoke Pesto Pasta Sauce

Step-by-Step

  1. Saute onion in vinegar.
  2. Add can of artichokes and liquid - make sure the pieces are bite-sized.
  3. Mix flour with cold water; add to artichoke mixture and stir while cooking for approximately 5 minutes.
  4. Skim milk can be added to thin mixture.
  5. Add the chopped tomatoes, and basil and cook for another 10-15 minutes; serve over spinach noodles.
