Choose a large enameled or stainless steel pot. Add vinegar and spices, Bring this mixture to a boil, and simmer until it is reduced by half.
Saute the onions and garlic in olive oil until well caramelized, then add the moleasses and brown sugar to the onion mixture and continue to simmer for about five minutes.
Now add the vinegar reduction and ketchup to the onion mixture and simmer about one hour. Let the mixture cool.
