How to Make Splendid Saucy Pizza Sauce
- Place all together in a small sauce pan. I micro-plane the garlic and use a large grater to grate the onion. Basically I want them to "disappear".
- Cook on a very low simmer with the pan cover ajar to let the steam escape. Let it bubble until it reaches the consistency you wish. Somewhere between the sauce and paste. Let cool down before topping the dough.
- NOTE: this recipe makes about a 1/2 cup more than I use on "jelly-roll" sized pizza. I place the unused portion in the freezer, and add to it. By the third time of pizza making I have enough to just thaw and use without making another batch.
