- 4 large dried guajillo peppers
- 2 medium dried pasilla peppers
- 14 ounces diced tomatoes, 1 can with juice
- 1/2 medium yellow onion, roughly chopped
- 2 cups beef stock not broth
- 2 tablespoons apple cider vinegar
- 2 tablespoons coconut sugar
- 1 tablespoon ground achiote
- 2 teaspoons salt kosher variety, fine grain
- 1 teaspoon ground cumin
- FINISHING TOUCH
- 2 tablespoons lime juice, freshly squeezed

Step 2What will you need? You will need a good pot to reduce the sauce, and a blender to mix it all up.

Step 3Gather your ingredients (mise en place).

Step 4Cut of the tops of the chilies and remove the seeds. Place into a bowl and cover with hot/boiling water for about 20 minutes.

Step 5After the allotted time, place the rehydrated chilies and the remainder of the ingredients (except the lime juice) into a blender, and blend until smooth.

Step 6Add the blended ingredients to a saucepan and slowly simmer until it begins to thicken, and reduces by 30%, about 20 – 25 minutes.

Step 8Add the lime juice to brighten the sauce and serve with your favorite Mexican dishes. Enjoy.
