Sofrito is used in many Puerto Rican dishes. But you can add it almost anything. My husband adds it to his scrambled eggs while cooking them. I add it to my spaghetti sauce to give it a kick.

Ingredients

  • 1 jar minced garlic (easier than peeling and mincing the garlic yourself)
  • 3 - green bell peppers
  • 3 large yellow onions
  • 2-3 bunches cilantro
  • 1/4 cup oil

How To Make sofrito

  • Step 1
    I use a food processor for this recipe. Chop the peppers, onions, and cilantro (no stems); add them along with the whole jar of garlic and oil to the food processor; blend them together until it's a thick mixture. Everything should be chopped and blended, no large chunks.
  • Step 2
    This can be stored in the refrigerator and used as needed. If your batch comes out pretty large you may want to divide it and freeze half.
