Sofrito is used in many Puerto Rican dishes. But you can add it almost anything. My husband adds it to his scrambled eggs while cooking them. I add it to my spaghetti sauce to give it a kick.

Ingredients
- 1 jar minced garlic (easier than peeling and mincing the garlic yourself)
- 3 - green bell peppers
- 3 large yellow onions
- 2-3 bunches cilantro
- 1/4 cup oil
How To Make sofrito

Step 1I use a food processor for this recipe. Chop the peppers, onions, and cilantro (no stems); add them along with the whole jar of garlic and oil to the food processor; blend them together until it's a thick mixture. Everything should be chopped and blended, no large chunks.

Step 2This can be stored in the refrigerator and used as needed. If your batch comes out pretty large you may want to divide it and freeze half.
