This was my mother in laws recipe, and I put this stuff in just about everything, from puerto rican rice,sauces, beans , soups, stews, in marinades, it is very strong so a little dab will do ya. I make a big batch and freeze it in zip loc bags , when you need it just break off a small piece (some people put it in ice cube trays to freeze, and then put it in the baggies. then they just grab an ice cube to drop in their sauce. some add ham and olives to theirs also, I don't because I add the ham and olives fresh if I need it :]

Ingredients

  • 5 - heads garlic peeled and separated
  • 3 large onions peeled and chopped
  • 4 large green peppers
  • 1 large bunch cilantro

How To Make sofrito

  • Step 1
    clean and chop green peppers and onions
  • Step 2
    peel and separate garlic cloves
  • Step 3
    rinse cilantro and shake off extra water
  • Step 4
    put all in food processor and process about 2 or 3 minutes.
  • Step 5
    You can use right away , and /or freeze it.
