sauce essentials: southern style bbq sauce
This is a simple BBQ sauce to make, and it’s one that I use when I fire up the BBQ and grill pork, beef, or chicken. I am using honey for the sweet of this sauce; however, it you want a more “Southern” approach, substitute the honey with an equal amount of dark molasses. Easy to make, beats most “store-bought” sauces, and is loaded with flavor. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 1 tablespoon grapeseed oil, or other non-flavored oil
- 1/4 cup yellow onion, finely chopped, or grated
- 1 clove garlic minced
- 1 tablespoon chili powder
- 10 ounces tomato puree (1 can)
- 1/3 cup fresh clover honey
- 1/4 cup apple cider vinegar
- - salt, kosher variety, to taste
- - black pepper, freshly ground, to taste

Step 1PREP/PREPARE

Step 2Gather your Ingredients (mise en place).

Step 3Add the grapeseed oil to a saucepan over medium heat.

Step 4When the oil heats up add the onions, and cook until they soften, but not brown, about 3 – 4 minutes.

Step 5Add the garlic, and stir until fragrant, about 60 seconds.

Step 6Add the chili powder, mix with the onions and garlic, and stir for about 30 seconds.

Step 7Reduce the heat to medium-low, add the remainder of the ingredients, and slowly simmer for an additional 15 minutes.

Step 8Chef’s Note: Do not let the sauce boil, just a slow, gentle simmer with just a few bubbles breaking the surface.

Step 9While the sauce is simmering, season with some salt & pepper, to taste.

Step 10Allow to cool, and then place the sauce into a blender, and blend until completely smooth.

Step 11Chef’s Tip: Do a final tasting for proper seasoning.

Step 12Store in a glass container with a tight-fitting lid, and place in the fridge until ready to use.

Step 14Use for basting grilled chicken, beef, or pork, and save some for serving on the side. In addition, I use this sauce when making mini meatball appetizers. Enjoy.
