Sauce Essentials: Japanese BBQ Sauce

This is a variation on a Japanese style BBQ sauce. It is relatively simple to construct, and is excellent for a dish called Tonkatsu (Japanese breaded pork). If you are looking for something a bit different than a traditional “American” BBQ Sauce, I have discovered that it works well on conventional pork and/or beef dishes.

  • 1/3 c
    ketchup, i prefer homemade
  • 2 Tbsp
    worcestershire sauce, i prefer homemade
  • 1 Tbsp
    sake, unflavored
  • 1 Tbsp
    coconut sugar, light variety
  • 1 Tbsp
    tamari sauce, or liquid aminos
  • 1 tsp
    dijon mustard, i prefer grey poupon
  • 1 pinch
    crushed red pepper flakes, or to taste

  2. Chef’s Note: If you have never made your own ketchup, I would recommend giving it a try. Here is a recipe to help you get started:

  3. Chef’s Note: Homemade Worcestershire sauce is easy/peasy to make, taste great, and do not include anchovies. Give it a try:

  4. Gather your Ingredients (mise en place).
  5. Add all the ingredients to a saucepan over medium heat.
  6. Whisk until thoroughly combined, as it comes up to a simmer.
  7. Allow to lightly simmer for five minutes.
  8. Remove from heat and allow to completely cool.
  9. Place in a sealed container in the fridge, until ready for use.
  10. Chef’s Note: This sauce will keep in the fridge for 4 – 6 weeks.
  12. Use as you would any BBQ sauce, when you want something a bit different. Enjoy.
  13. Keep the faith, and keep cooking.
