This is a variation on a Japanese style BBQ sauce. It is relatively simple to construct, and is excellent for a dish called Tonkatsu (Japanese breaded pork). If you are looking for something a bit different than a traditional “American” BBQ Sauce, I have discovered that it works well on conventional pork and/or beef dishes. Ingredients

  • PLAN/PURCHASE
  • 1/3 cup ketchup, i prefer homemade
  • 2 tablespoons worcestershire sauce, i prefer homemade
  • 1 tablespoon sake, unflavored
  • 1 tablespoon coconut sugar, light variety
  • 1 tablespoon tamari sauce, or liquid aminos
  • 1 teaspoon dijon mustard, i prefer grey poupon
  • 1 pinch crushed red pepper flakes, or to taste

    Gather your Ingredients (mise en place).
  • Step 5
    Add all the ingredients to a saucepan over medium heat.
  • Step 6
    Whisk until thoroughly combined, as it comes up to a simmer.
  • Step 7
    Allow to lightly simmer for five minutes.
  • Step 8
    Remove from heat and allow to completely cool.
  • Step 9
    Place in a sealed container in the fridge, until ready for use.
  • Step 10
    Chef’s Note: This sauce will keep in the fridge for 4 – 6 weeks.
