sauce essentials: dill bbq white sauce
If you have ever been to a BBQ joint down South, you have probably been introduced to what is known as “Alabama White BBQ Sauce.” I’m sure that if there ever was an original recipe for this sauce it is now lost to history. My variation is kicked up with a fun spice combination, and some dill relish. My two favorite ways to serve this are with chicken and ribs; however, the introduction of the dill relish, will make it an excellent candidate for seafood. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 2 cloves baked garlic
- 1/2 cup mayonnaise, duke’s is my favorite, but it can be difficult to find
- 2 tablespoons dill relish
- 1 tablespoon lemon juice, freshly squeezed
- 1 tablespoon apple cider vinegar
- 1 tablespoon fresh clover honey
- 1/2 teaspoon white pepper, freshly ground, or to taste
- 1/4 teaspoon salt, kosher variety, or to taste
- 1 teaspoon dijon mustard, i prefer grey poupon
- 1 teaspoon hot sauce, i prefer frank’s

Step 2Chef’s Note: While this sauce is defined as a Barbecue Sauce, most chefs consider it a condiment. In addition, I do not recommend using this sauce as a marinade.

Step 3Gather your Ingredients (mise en place).

Step 4Begin by baking the garlic.

Step 6Place all the ingredients into a blender.

Step 7Blend until completely smooth.

Step 8Chef’s Tip: If you want the sauce thinner, add a bit of water, a teaspoon at a time, until you reach the desired consistency. If you want it thicker, add a a bit more mayonnaise until you like what you see.

Step 9Chef’s Note: Do a final tasting for proper seasoning.

Step 10Place in a non-reactive jar, and store in the refrigerator until needed.

Step 11Chef’s Tip: This sauce benefits from a night in the frig before its first use.
