If you have ever been to a BBQ joint down South, you have probably been introduced to what is known as “Alabama White BBQ Sauce.” I’m sure that if there ever was an original recipe for this sauce it is now lost to history. My variation is kicked up with a fun spice combination, and some dill relish. My two favorite ways to serve this are with chicken and ribs; however, the introduction of the dill relish, will make it an excellent candidate for seafood. So, you ready… Let’s get into the kitchen.

Ingredients For sauce essentials: dill bbq white sauce

  • PLAN/PURCHASE
  • 2 clove
    baked garlic
  • 1/2 c
    mayonnaise, duke’s is my favorite, but it can be difficult to find
  • 2 Tbsp
    dill relish
  • 1 Tbsp
    lemon juice, freshly squeezed
  • 1 Tbsp
    apple cider vinegar
  • 1 Tbsp
    fresh clover honey
  • 1/2 tsp
    white pepper, freshly ground, or to taste
  • 1/4 tsp
    salt, kosher variety, or to taste
  • 1 tsp
    dijon mustard, i prefer grey poupon
  • 1 tsp
    hot sauce, i prefer frank’s

    Chef’s Note: While this sauce is defined as a Barbecue Sauce, most chefs consider it a condiment. In addition, I do not recommend using this sauce as a marinade.

    Gather your Ingredients (mise en place).

    Begin by baking the garlic.

    Place all the ingredients into a blender.

    Blend until completely smooth.

    Chef’s Tip: If you want the sauce thinner, add a bit of water, a teaspoon at a time, until you reach the desired consistency. If you want it thicker, add a a bit more mayonnaise until you like what you see.

    Chef’s Note: Do a final tasting for proper seasoning.

    Place in a non-reactive jar, and store in the refrigerator until needed.

    Chef’s Tip: This sauce benefits from a night in the frig before its first use.
