I started making this when we had an over abundance of our home grown "Juliet" tomatoes. Now I make several batches and freeze it for the months when we no longer have the fresh tomatoes. Roma tomatoes work well also.

How to Make Roasted Tomato Spaghetti Sauce


  1. Cut tomatoes and onion into chunks
  2. Sprinkle with salt, pepper, and garlic powder. Add oil and mix together.
  3. Pour into 8x8 glass Pyrex baking dish
  4. Roast at 425°F for 1 1/2 hours, stirring every 20 minutes
  5. Remove from oven and allow to cool for a few minutes. Then blend with a hand blender until smooth, being careful that it doesn't splatter.
