roasted tomato spaghetti sauce

I started making this when we had an over abundance of our home grown "Juliet" tomatoes. Now I make several batches and freeze it for the months when we no longer have the fresh tomatoes. Roma tomatoes work well also.

Ingredients

  • 3 pounds tomatoes
  • 1/2 large onion
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt and pepper
  • 3 tablespoons olive oil, extra virgin

How To Make roasted tomato spaghetti sauce

  • Step 1
    Cut tomatoes and onion into chunks
  • Step 2
    Sprinkle with salt, pepper, and garlic powder. Add oil and mix together.
  • Step 3
    Pour into 8x8 glass Pyrex baking dish
  • Step 4
    Roast at 425°F for 1 1/2 hours, stirring every 20 minutes
  • The finished sauce, after blending with a hand blender.
    Step 5
    Remove from oven and allow to cool for a few minutes. Then blend with a hand blender until smooth, being careful that it doesn't splatter.
