I started making this when we had an over abundance of our home grown "Juliet" tomatoes. Now I make several batches and freeze it for the months when we no longer have the fresh tomatoes. Roma tomatoes work well also.

Ingredients For roasted tomato spaghetti sauce

3 lbtomatoes

1/2 lgonion

1/2 tspgarlic powder

1/2 tspsalt and pepper

3 Tbspolive oil, extra virgin
How To Make roasted tomato spaghetti sauce

1Cut tomatoes and onion into chunks

2Sprinkle with salt, pepper, and garlic powder. Add oil and mix together.

3Pour into 8x8 glass Pyrex baking dish

4Roast at 425°F for 1 1/2 hours, stirring every 20 minutes

5Remove from oven and allow to cool for a few minutes. Then blend with a hand blender until smooth, being careful that it doesn't splatter.
